The seven core stages

  1. Grading — size raw nuts so they shell evenly
  2. Steaming — soften the shell for a clean cut
  3. Shelling / cutting — crack the shell, release the kernel
  4. Drying (borma) — loosen the brown testa skin
  5. Peeling — remove the skin, dry method
  6. Grading & sorting — W-grades and colour
  7. Vacuum packing — nitrogen flush for shelf life

Manual, semi-automatic or fully automatic

The same seven stages can be run by hand, semi-automatically, or as a fully automatic plant. More automation means higher whole-kernel yield and lower labour per tonne.
